A new Cousins Maine Lobster franchise truck has arrived in Oklahoma City.
The fast-casual food truck, specializing in lobster rolls, is owned by Jimmy Shoshani along with Ahmer and Sarah Khan.
According to Cousins Maine Lobster, Shoshani is the brand’s most experienced franchise. He joined the Cousins Maine Lobster in 2014 and launched the brand in the Las Vegas market in 2015. The moves arrived after years in the wine and spirits industry in addition to experience in the fuel center business.
Khan is an emergency room physician who joined the brand in 2018. Born and raised in Dallas, Khan’s family has a long history in the fuel center industry, and also spent time gaining experience within the QSR industry. He and his wife, Sarah, partnered with Shoshani to grow the brand across Texas.
The franchisee group now operates six Cousins Maine Lobster trucks throughout Dallas, Houston, Austin, and Tyler.
The new Oklahoma City truck marks their seventh unit and first expansion outside of Texas as a group. Plans in development call for the group to open additional trucks in San Antonio, Texas, later this summer and in Tulsa, Oklahoma, and Bentonville, Arkansas in 2026.
Based in Los Angeles, the brand was founded by Jim Tselikis and Sabin Lomac in 2012. Cousins Maine Lobster operates more than 60 trucks and locations in about 30 states.
In Oklahoma City, the new truck opened for business as the Oklahoma City Memorial Marathon was held.

Guests had an opportunity to sample Cousins Maine Lobsters in addition to authentic New England clam chowder and delicious whoopie pies.
Cousins Maine Lobster said that it is seeking operators who are “passionate about delivering high-quality food and exceptional customer service.”
The brand is currently targeting markets with strong demand for high-quality, fast-casual seafood, including Seattle, Washington; San Diego, California; Reno, Nevada; and areas across the Midwest, including St. Louis, Missouri; Des Moines, Iowa; and Fort Wayne, Indiana.
